Hello and merry "fine" Christmas...
I came across a recipe for Hot Buttered Rum Mix which kicks ass on
anything you can buy in a store, and costs a whole lot less too. For
about $5 I made a 2 litre pitcher of this stuff, the same amount would
have bought about 2 cups worth at Esquimalt Mr. Grocer's.
What you need:
A 1 litre carton of vanilla ice cream
1 pound (half a 1kg bag) of light brown sugar
1 pound of icing sugar
1/2 pound (half a 2-cup "brick") of butter - use REAL butter not margarine!
a tablespoon of nutmeg
Your Choice of rum (I suggest white but any will do, really)
How to do it:
Let the ice cream melt in a large bowl. Melt the butter in the
microwave (or on the stovetop if you haven't joined the '70s and gotten
a microwave yet) and mix it into the ice cream. Then add the sugars and
the nutmeg. I also added a tablespoon of vanilla to mine but it's
optional. Mix the living bejeezus out of it. The sugar will tend to
form lumps and you don't want those. The butter may harden into tiny
lumps if the ice cream is still cold; this is OK as it will melt when
you pour the water into it.
When you're done mixing it should be a very thick, pasty liquid that
takes forever to pour. If it's too thin add more brown sugar and/or
butter.
To serve: Put two or three tablespoons of the mix into a coffee mug.
Add 1 shot-glass (or more if you're a hardcore alcoholic) of rum and
fill to the top with boiling water. Stir a minute, until the sugar is
dissolved and the butter is melted. You may add whipped cream and/or a
nutmeg garnish to the top. Some people like to stir HBR with a cinnamon
stick and leave it in; this is fine too.
If you make this stuff right (and it's pretty simple so it's hard to
screw up) don't be surprised if your christmas guests pester you for
this recipe. It's also really good without the rum so you can serve
virgin HBR's to your kids and designated drivers...
